Pilot Coffee Roasters
36 Toronto St, Toronto, ON M5C 2C5, Canada
Editor's Review
Say what you will about office culture and the much-maligned cubicle life, but if you have a specialty coffee shop like Pilot Coffee Roasters located in your downtown skyscraper, it can’t be all bad, right? It is incredible to be able to enjoy a coffee on the way into work, grab a can of cold brew and a pastry on your break and then be able to stock up with beans and a brand new Baratza Encore on your way home. But that is exactly what you get at 36 Toronto St.
A huge, relatively empty lobby finds Pilot tucked into the back underneath an exposed elevator shaft shooting up ten stories before disappearing even higher. The café is a small, wedge-shaped kiosk cut into the centre of the space, highlighted with a bright yellow column. A scaled down version of their other locations, the offerings are nearly identical here to other Pilot cafés, which is amazing for such a small space. A Modbar pulls espresso-based drinks, while a Fetco brews up filter coffee next to their Pluck loose-leaf tea and Soul chocolate syrup. It's the perfect (tiny) spot for the office worker on the go.
