In an unassuming back alley of Toronto’s East End are two absolute heavyweights in Toronto’s drink scene. Along with one of the city’s most beloved craft breweries, Left Field Brewery, Pilot Coffee Roasters have moved their roastery into a warehouse that includes their offices, cold brewing facility, training lab, and a tasting bar open to the public. (The roastery itself was formerly located at their original location in Leslieville, Te Aro, which remains as a café under that name).
The tasting bar is a great representation of a stylistic trend becoming more prevalent around the world, especially at larger roasteries and coffee companies. The idea is to have a simple set of high-quality offerings served with transparency and expertise all in an effort to educate customers and provide a unique and memorable coffee experience. With their training lab separated by a glass partition and only the bar seating and metal railings to separate the roasting facility, it becomes a perfect atmosphere to discuss all elements of the coffee industry from bean to cup.
Unique to this location, Pilot will feature specific roasters from all over the world to show off other examples of coffee being presented at its best. With the strategic intention to bring in rare and sometimes unattainable coffee for their customers to try, both staff and the city’s coffee drinkers are able to experiment and discuss everything coffee with other like-minded individuals in this ultimate environment.
