Brew Lab is very much at the forefront of Edinburgh’s coffee scene, a bright, hipsterish spot on South College Street that is forever experimenting with how much you can extract from coffee.
Its selection is unrivalled – there’s always a couple of filters and a couple of espressos on the go, with an enviable cast of guest roasters. They also have their own Cold Brew on offer, which is nothing like any sad, grainy cold brew you may have tried at home – it’s more like a refreshing iced sherry, definitely worth trying if you’re a cold brew skeptic looking to be converted.
In the basement of the cafe there’s also a purpose built coffee training centre, which no doubt has helped the independent coffee scene in the city flourish no end. Whether you’re a home hobbyist, or a wouldbe barista, there’s a good range of courses to choose from, and you’ll be getting taught by the best. A huge bonus is that it’s one of few cafes with a late license, and a great evening menu of cheese boards, cured meats, and good wine – even better during the Festival, when it is almost constantly busy.
