Visiting Talk Barista Saigon felt familiar, warm and friendly. The owner’s art lined the shelves, a coffee bean constructed atlas took centre stage, an array of brewing equipment lay dispersed on and around the bar, and right at the back, a wing chun wooden dummy. It reminded me of the more humble café designs during the early days of specialty coffee, before exposed brick and low hanging cable lights took over; OK, maybe without the wing chun equipment.
Take the aforementioned coffee house description, compress and feed it into the spirit of a human body, and you get Viet Bui, Talk Barista’s devoted and welcoming owner. Viet told me all about his dreams of changing the coffee scene in Vietnam, educating his community on being proud of Vietnam’s prowess in coffee farming, the quality of the beans grown in the central highlands and the journey each bean takes to cup. Viet went on to describe his focus on wellbeing and helping the local community to health in both body and mind. In fact, the wooden dummy at the back of the café is used by Viet to train Vietnamese woman to protect themselves through self-defence techniques.
The café is staffed by youngsters whom Viet dedicates time to training and educating on coffee. The quality of flavour of the AeroPress was great, and we are looking forward to a revisiting opportunity to hear about Viet’s progress.
