Brewers Cup 2019 - Elysia Tan
With the World Brewer's Cup 2019 just around the corner (hosted at the Boston Specialty Coffee Expo), we've asked the finalists a few questions. Up second up is Elysia Tan from Singapore.
How did you get your start in the coffee industry?
It started off as a part time job and I want to learn more about cafe operations. I was touching on different aspects of a FnB operations and coffee brewing caught my attention. I love how much coffee amazes me all the time. The more I learn about it, the more I realised how much more I have to learn about it.
If you did not work in coffee, what other industry interests you?
If I did not work in coffee, I would probably be working in the finance industry. I love to analyse numbers and decipher stuff. It excites me when I am able to solve a mystery and derive interesting facts/stuff about it.
What was your journey leading to the WBrC in Boston?
It has been a roller coaster ride. There were nights when you just couldn't get things right and you start to doubt yourself as a brewer. There are days when you feel so excited and connected to your coffee. Thinking about how can you translate your love for my coffee into my 10 minutes is challenging.
What coffee will you be using at the WBrC in Boston and why?
I will be using coffee from Cafe Granja La Esperanza. We have been working closing with our friends from Cafe Granja since our Singapore Nationals. Even before then we have tasted many, many amazing coffees from them. It is not about working with someone we know but what we believe in. We are very lucky to be able to work with them remotely over the web.
What brew method will you be using at the WBrC in Boston and why?
I love how pour over brings out the cleanliness in the cup and at the same time achieves complexity.
Are there any things you’re excited to see or do in Boston (other than the Championship of course)?
I am looking to all the tasty food in Boston! Besides coffee and Sherlock Holmes, food is my best friend. Tee hee!
